Organic Roman pecorino cheese PDO is produced especially in Sardinia. For the production of this cheese, only raw sheep milk is used, coming from Sardinian pastures, coagulated with lamb dry-salted rennet. Its typical shape is tall and cylindrical with perpendicular sides.
Roman pecorino cheese has a white rind, its paste is hard and compact with small and sparse holes. It is characterized by a strong taste enhanced by a slightly salty and spicy flavour. Unique intense and strongly aromatic notes.
